This Mexican Pluma has been decaffinated by a natural method, called Royal Select Water Process. Royal select is similar to the swiss water process, because both methods use water to remove the caffeine. The more widely used method which uses methylene chloride, ethyl acetate, and pressurized co2 to remove the caffeine is pretty gross and it only removes 96-98% of the caffeine. RS removes 99.9% of all the caffeine while affecting the flavor the least amount. This Mexican is a full bodied coffee with a well rounded aroma, earthy taste, and a smooth lingering sweetness. As well as being fair trade and organic… this coffee is also Rainforest Alliance certified!
