Nicaraguan Mancotal (FT/O)
A beautifully complex and delicious medium bodied Nicaraguan. At first, I noted a nice citrus/raisin sort of brightness with a slight winey undertone. As it cooled, the body carried this flavor profile into a very enjoyable, syrupy sort of Crème caramel aftertaste. Very enjoyable. This is of course, a sustainable shade-grown coffee, but it is also Fair-Trade & Organic!
Costa Rican La Amistad (Org)
A beautiful example of a high quality Costa Rican offering. The flavor on this one, starts out with a brightness of cherry and raisin; The body carries it into hints of almond and a little milk chocolate. A very balanced, smooth cup. La Amistad is a farm located above 1200 meters next to the border between Cost Rica and Panama. This farm has been a family farm for generations and the family has kept much of it as natural forest. It is now a "National Private Protected Area" called Las Tablas, which forbids people from hunting, extracting wood or doing any damage to the area.
Mexican Decaf (FT/O HG)
This Mexican Pluma has been decaffinated by a natural method, called Royal Select Water Process. Royal select is similar to the swiss water process, because both methods use water to remove the caffeine. The more widely used method which uses methylene chloride, ethyl acetate, and pressurized co2 to remove the caffeine is pretty gross and it only removes 96-98% of the caffeine. RS removes 99.9% of all the caffeine while affecting the flavor the least amount. This Mexican is a full bodied coffee with a well rounded aroma, earthy taste, and a smooth lingering sweetness.
